Southwest Corn


Mexi-Cajun Southwest Corn

  • 2 cans whole kernel corn, drained
  • 1 can Ro-Tel tomatoes, mild or hot (preference)
  • 2 tsp Mexi-Cajun Seasoning

In a medium skillet, combine corn and tomatoes and stir to mix.  Add seasoning and cook on low simmer, uncovered for about 20 minutes, stirring occasionally.
