Slow Cooker Fiesta Chicken


Slow Cooker Fiesta Chicken

  • 4 boneless, skinless chicken breasts
  • 1 1/2 T Mexi-Cajun Seasoning
  • 1 can black beans, rinsed and drained
  • 1 can Ro-Tel
  • 1 can corn, undrained
  • 1 block cream cheese

Add everything together in a slow cooker.  Cook 4 hours on high or 6 hours on low.  Serve over rice.

I altered Tiffany's recipe only by substituting Mexi-Cajun Seasoning for what was suggested in her version.  It was delicious and so, so easy.

Leftover Bonus

If your family didn't wipe this whole dish out in one sitting, take what remains and make a dip.   Add in some queso cheese (cubed), put in an oven-safe dish, top with some shredded cheddar, and bake at 350 for about 15-20 minutes (just long enough to heat thoroughly and melt the cheese).  Use your favorite dippers (tortilla chips, toasted pita bread, or veggie sticks) and enjoy!
