Sausage Cheese Balls


Mexi-Cajun Sausage Cheese Balls

1 pkg regular breakfast sausage

1 pkg Mexi-Cajun Cornbread Mix

3 cups shredded cheddar

In a large bowl mix all three ingredients.  Using both hands, mix and mix and mix until the sausage is worked down into small, cornmeal-coated bits.  At this point if the mixture feels too dry add 3/4 stick of melted butter.  Work this in until mixture begins to easily cling together when pressed.

Form into 1 1/2 inch balls and space out onto baking sheets lined with parchment paper.  Bake for 15 minutes at 350.  Serve warm.

Makes approximately 4 dozen.
