Pineapple Pork Chops


Pineapple Pork Chops

{Recipe adapted from a Hello Fresh meal}

Pineapple Salsa

  • 1 cup pineapple, diced
  • 1 T shallot, finely chopped
  • 1 T cilantro, chopped
  • juice of 1/2 lime
  • 1 tsp Mexi-Cajun

Toss all ingredients together in a small bowl and refrigerate until serving.


Honey Glazed Pork Chops

  • 4 Center-cut pork chops
  • Mexi-Cajun Seasoning
  • shallot, finely chopped
  • 3 T honey
  • 1/4 cup water
  • 1/2 fresh lime

 Rinse and dry pork chops.  Season liberally on both sides.

Heat a large pan on med-hi heat.  Add chops to pan and cook until almost done, approx 4-5 minutes per side.  Stir in shallot, honey, and water.  Cook until pork is completely done, another 2-3 minutes.  Remove from heat and squeeze fresh lime over entire pan.

Plate pork chops.  Stir glaze remaining in pan and then distribute evenly over each chop.

Top with pineapple salsa.  Enjoy!
