No Peek Chicken 

(modified from a recipe found on



  • 4-6 chicken thighs
  • 2 cups long grain wild rice
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • Mexi-Cajun Seasoning


Cook rice according to instructions on package.

Preheat oven to 350 degrees.

Combine cooked rice, cream of mushroom, cream of chicken, and 1 T Mexi-Cajun Seasoning.  Transfer to pre-greased 9x13 casserole dish.

Season chicken thighs with seasoning and arrange on top of rice mixture.

Cover with foil and bake at 350 for 2 1/2 hours.  Remove from oven and serve hot.


*Pro Tip: add bacon slices on top of chicken to keep the meat extra juicy.
