Mini Corndog Muffins


Mini Corndog Muffins

(yields approximately 4 dozen)


1 pkg Mexi-Cajun Cornbread Mix

2 eggs

1 cup milk

1/3 cup oil

3/4 cup shredded cheese


4 hot dog franks, any choice


Preheat oven to 350 and grease mini-muffin pan.

Mix cornbread according to directions on package.  Fold in shredded cheese until well mixed.  Cut franks into 12 slices.  

Place a slice of frank into each mini-muffin cup and spoon cornbread batter over each one.  

Bake for approx 10 minutes, or until a toothpick inserted into the center comes out clean.
