Mexi-Cajun Shrimp & Orzo Salad

With this version of orzo salad, I sautéed a few veggies and added the shrimp right in.  It certainly isn't rocket science ;) but it definitely makes for a pretty darn good meal.

 

Mexi-Cajun Shrimp & Orzo Salad 

 

  •  3 tomatillos, sliced 
  •  handful grape or cherry tomatoes, halved
  •  1/2 jalapeno, finely chopped
  •  1/4 red onion, roughly chopped 
  •  1/2 lb shrimp, peeled and deveined 
  •  1 1/2 - 2 T Mexi-Cajun Seasoning 
  •  orzo, cooked and drained 
  •  pecan oil, or extra extra virgin olive oil 

 

In a large skillet, sautée onion and jalapeno in about 1 T oil.  Cook until onions become tender.  Add seasoning, shrimp and more oil if needed. Sautée until shrimp are cooked and turn pink.

In a large bowl, combine sautée mixture and orzo.  Add tomatoes and tomatillos and toss well.

Serve warm.
