Honey Lime Roasted Pork Tenderloin

Preheat oven to 425 degrees.  Drizzle oil in oven-proof casserole dish until bottom and sides are lightly coated.

In a small bowl, measure out 1/2 cup honey.  Add juice from 1 lime and whisk together with a fork until blended.  Pour mixture over tenderloin and massage in with hands until meat is completely coated (top, sides, and bottom).  Liberally shake Mexi-Cajun Seasoning over entire tenderloin.

Bake at 425 degrees for 15 minutes.  Turn tenderloin over and cook for about 10 more minutes or until a meat thermometer inserted into the center reads 160 degrees.

Pull from oven, cover with tin foil, and allow to sit for about 10 minutes before slicing and serving.
