Homemade Cheeseits

Homemade Cheese-its

  • 8 oz cheddar cheese, shredded
  • 1 cup A/P flour
  • 1 stick butter
  • 1/2 tsp salt
  • 1 1/2 tsp Mexi-Cajun Seasoning
  • 1 cup rice crispies

Preheat oven to 350 degrees.  Line 2 large cookie sheets with parchment paper.

In a large bowl, cut butter into flour using 2 forks (or if you're fancy enough to have a pastry cutter, use that instead) until you are left with a mealy textured flour mix.  Add seasonings, rice cripsies, and cheese.  Mix together well.  

Roll mixture into about 1" balls then press out onto cookie sheet, taking care not to press them too thinly.  

Bake approximately 20 minutes or until the outer edges begin to darken just a bit.  Pull them out and let them cool.   Then just try to eat only one!
