Garlic Parmesan Roasted Cauliflower
Mexi-Cajun Garlic Parmesan Roasted Cauliflower
1/2 cup plain greek yogurt
1 T chopped garlic
2 tsp Mexi-Cajun Seasoning
1 head Cauliflower, cut into florets
1/4 cup fine bread crumbs
1/4 parmesan cheese, grated
In a med bowl, mix together yogurt, garlic and seasoning. Add Cauliflower florets and toss until they are completely coated in yogurt mixture.
Combine bread crumbs and parmesan is a second medium bowl. Roll cauliflower florets in breadcrumb mixture until each one is coated.
Space out onto baking sheet and roast in oven at 400 degrees for 18 minutes.
Serving suggestions: Serve as an alternative to breadsticks, as a side to spaghetti and meatballs, as an appetizer, or as a party hor d'oeurve.
