Easy Chicken Fettucini
Easy Chicken Fettuccine
- 2 cans chicken breast meat, drained
- 1 1/2 T Mexi-Cajun Seasoning
- 2 T butter
- 8 oz cream cheese
- 1/2 cup Half & Half
- 1/4 cup parmesean & romano cheeses, grated
- grape tomatoes, halved
- fettuccine, cooked al dente
In a pot of boiling salt water, cook fettuccine noodles.
Add butter, chicken and seasoning to large skillet. Stir in cream cheese and continue to cook over lo-med heat until melted. Add half & half and grated cheeses, continuing to stir and cook until everything is melded together.
Drain noodles then add chicken and cream sauce mixture. Stir until everything is incorporated then mix in fresh tomatoes.
Serve hot with a side salad and a nice Pinot Grigio. ;)
