Cheesy Corn & Onion Dip

(adjusted from Aimee Bowlin's recipe)

  • 2 T butter
  • 1 onion, finely chopped
  • 1 can niblet corn, drained
  • 8oz cream cheese 
  • 2 T green onions, chopped
  • 1 tsp Mexi-Cajun Seasoining
  • 1 cup shredded cheese (colby jack, cheddar, or whatever your preference)

In a heavy saucepan, melt butter.  Add onions and sautée until tender. 

Lower heat to med/low.  Add drained corn and stir in cream cheese.

Keep stirring until cream cheese is completely softened and everything is mixed together.  Remove from heat. 

Season with Mexi-Cajun Seasoning and stir in green onions.

Transfer to baking dish then top with shredded cheese. 

Bake in the oven at 350 for about 20 minutes or until cheese is completely melted on top.  Serve with chips or crackers.
