Abita Mexi-Cajun Meatloaf

Abita Mexi-Cajun Meatloaf 

  • 1/4 red onion, chopped
  • 1/2 bell pepper, chopped
  • 1lb ground beef
  • 1 T worcestershire sauce
  • 1 tsp salt
  • 1 T  Mexi-Cajun Seasoning
  • 3 T breadcrumbs
  • 1 egg
  • 1/4 cup Abita Amber
  • ketchup (optional)

In a large bowl, season ground meat with salt and Mexi-Cajun.  Add onion, pepper and breadcrumbs and knead together with hands.  Work in worcestershire, egg and beer, kneading until everything is nicely incorporated.

Mold into a loaf, pressing and packing so meat keeps the shape.

Drizzle just about a tsp olive oil into bottom of casserole dish.  Transfer meat loaf to dish.  Sprinkle extra MexiCajun on top  and then coat with ketchup.

Bake at 400° for about 50 minutes.  Using a meat thermometer, test center.  When internal temperature reaches 150-160° it is done.
